On the rocky terraces of Pantelleria, the Zibibbo vineyards are cultivated. Due to the nature of the soil and the climate of this island, the center of the Mediterranean, the vines grown with a low sapling produce few bunches of grapes, which are harvested at the end of August, left to dry in the sun for 30 days.
